Quick Chicken Penne

8B68F57F-1746-40A0-93C3-A2E9DCE576F0This is an extremely quick supper dish. This kind of a pasta dish I think of as a stir fry. Quick and simple sauce cooked in a frying pan and the pasta tossed in it to finish. The nice part of this is how fresh tasting the sauce is. This isn’t a sauce that you normally have with pasta. Really it’s just my throwing stuff in a frying pan and then adding cooked pasta.

1 chicken breast cut in thin strips

1 pint of cherry tomatoes cut in half

1 and 1/2 cups broccoli florets

3 green onions chopped

5 cloves garlic minced

1 teaspoon dry basil

Salt and pepper to taste

2 tablespoons parmesan cheese grated

2 tablespoons olive oil

1/2 cup of pasta water

4 cups cooked Penne

Since this is a quick sauce you start cooking it when you drop the Penne to cook, just have the frying pan preheated at that point.

Preheat a frying pan on medium high heat, add the chicken with 1 teaspoon olive oil and cook for about 1 minute. Add the rest of the olive oil, then add tomatoes, basil, and salt and pepper. Reduce heat to medium and cook for 5 minutes stirring often, and then add the garlic, broccoli and green onions. When pasta is just about cooked remove 1/3 of a cup of water. When Penne is cooked drain and add to frying pan, stir and add the parmesan cheese and pasta water. Mix everything together well and serve.
