Here I am again cooking chicken again and it isn’t something I like. It gets cooked often because my wife likes it. So since any chicken, other than fried chicken, is something I don’t like, I play with favours to make it something I can eat. Since I like lemon juice and oregano this seemed like a good idea. It’s actually a very simple recipe, but most of my recipes are, quick and simple. Since I have had chicken souvlaki and enjoyed it I kind of wanted those flavours. This is a recipe that I will make again, flavours were great and it hit the quick and simple mark. Tomorrow the weather is going to be better, so it back to bbqed hamburgers again because my wife likes them. This time making them a little different, and hope it works. But this recipe is about chicken so I had better get back to it.
2 flattened chicken breast
1/2 cup lemon juice
2 teaspoons oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons butter
I used a pie plate for this because it holds both chicken breasts well. Mix lemon juice, oregano, garlic powder, onion powder, salt and pepper together. Place the chicken breasts in the plate and refrigerate for 1 hour, turn after a half hour. Preheat a frying pan with butter on medium heat. Add the chicken breasts, cover and cook for 5 minutes. Turn breasts and cover, cook for an additional 5 minutes uncovered. Check to make sure that they are fully cooked and serve.
You should try using chicken thighs or whole legs with a sauce or gravy. You might like chicken more.
Chicken thighs are just greasy and not a good greasy. Legs are just stringy. Wings are 100 times better than both.
