Since I grow chives they get used in lots of different things. There great in scrambled eggs, omelettes, soups, mashed potatoes. Think I have used them in about a hundred different things. Still finding different things to use them in, this salad dressing is the latest.
1 tablespoon finely chopped chives
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons mayonnaise
Put everything in a jar, shake well. You want to make it about 2 hours before you use it and leave it on the counter. Shake well before using. You can double or triple this as it will keep for 3 or 4 days in the fridge.
