Corn And Potato Hash With The Bratwurst

The idea seemed like a good one, so when an idea seems good it is always worth trying. Funny thing is as much as I like corn I have never cooked it in a frying pan. It works well with the flavours in the bratwurst, and gives the starch and vegetable that I think all meals should have. It’s easy to make and can be made ahead and reheated. Only maybe tricky part is you want to brown the potato cubes separately. The bacon fat is optional I used it because I had it in the fridge. Made homemade mustard to have with the bratwurst.

1 large potato cut in 1/2 inch cubes

1/2 teaspoon salt and pepper

1/2 teaspoon olive oil

1/2 tablespoon butter

Preheat a frying pan on medium high heat with oil and butter. When butter has melted add potatoes, salt and pepper. Brown potatoes on all sides, remove to a dish lined with paper towel.

1 and 1/2 cups kernel corn

1 half onion finely chopped

1/4 cup finely diced celery

4 cloves garlic minced

1/2 cup diced tomato

1/2 teaspoon chilli powder

1/2 tablespoon butter

1/2 teaspoon bacon fat

salt and pepper to taste

chopped parsley for garnish

Preheat a frying pan on medium high heat with the butter and bacon fat. When butter starts to brown add the corn and spread it evenly around the pan, don’t touch it for 1 minute. Toss and spread evenly again, sprinkle onion, celery, garlic, chilli powder, salt and pepper on top. After a minute stir until onions start to slightly brown, then add potatoes and tomatoes and stir occasionally until everything is hot. Sprinkle with chopped parsley to serve.
