A Very Simple Supper

Last night I just wanted something simple that still tasted good, pork chops, pan gravy, mashed potatoes, and a vegetable. Been awhile since we have had mashed potatoes and gravy and when you grow up eating it you kind of crave it. Pan gravy is either really good or really bad because it is easy to screw it up. For pork chops this gravy just seems to work perfectly and tastes good. Pork now is very lean unlike when my mother made pan gravy for pork chops. Now I have to use butter rather than trimming the chops and rendering the trimmings. The chops and the gravy are made in twenty minutes so this is a great dish for people to make even on a work day. You need a thick chop, I cut my own pork loin chops and make them one inch thick. This is for two people so for more just increase everything.

4 pork loin chops

1 and 1/2 tablespoons butter

2 cloves garlic minced

1 large green onion chopped

2 teaspoons dried parsley flakes

1 teaspoon flour

1 cup of chicken broth

salt and pepper to taste

Preheat a frying pan on medium heat with the butter. Salt and pepper the chops and add to the pan, cover and cook for 3 minutes. Turn the chops over and cook covered for another 3 minutes. Remove the chops from the pan, add the garlic, green onions, parsley, and flour wisk for about 30 seconds. Add the chicken broth, when thickened reduce heat to simmer, return the chops to the pan. Cook covered for 5 minutes, turn the chops over and cook covered for another 5 minutes and serve.
