Mushroom Fettuccine Alfredo, My Treat For Today

This morning was our weekly shopping trip, and yes we wore our masks which isn’t mandatory now. Since it’s is going to be stupid hot and the humidity is high I decided bbqing was out. Why leave the AC if I don’t have to, so it was think of something my wife would like and I would too. Pasta is something my wife never says no to, and I like it also. Things is we disagree greatly on what type of sauce. For my taste just olive oil and lots of garlic is a great sauce if you add a little pasta water and lots of cheese. My wife likes a tomato base meat sauce, l like it also but there are much better things for my taste. Linguine and clams or any other seafood but most of all I love Alfredo sauce. So tonight was two different sauces, meat sauce for my wife and Alfredo for myself.

Alfredo sauce is actually very simple to make, even some of the sauces in the jars are ok if you add more pepper and garlic. Nice thing with Alfredo sauce is you can add all kinds of things to it or have it plain, which is actually a great way. I have used shrimp, mushrooms, and the frozen little bags of mixed seafood, it also works with that stuff called chicken. Tonight I decided mushrooms would be my choice because I haven’t had mushrooms for a while. So I actually got two treats for supper, Alfredo sauce and mushrooms. Mushrooms I could eat every day and they make a great lunch when served on toast.

My Alfredo sauce could never be called a classic Alfredo because I never use parmesan cheese. Guess in some places people would say I don’t have good taste because I prefer asiago and romano cheese rather than parmesan. Parmesan is a great cheese but when it comes to cooking whether it’s cheese or anything else use what you like. Alfredo sauce is just butter, lots of garlic, pepper, heavy cream, and parmesan cheese. The way I look at it any hard salty cheese you like will work. Since I wanted a lazy afternoon I bought a very good quality dry pasta which did illicit a comment from my wife that I should of made pasta. The reason you can add just about anything to the Alfredo sauce is that you need lots of butter. The mushrooms I cooked in the butter and then added the rest of the ingredients for the sauce. The complete sauce took the same amount of time as it took to boil the pasta.

8 mushrooms sliced

2 tablespoons butter

5 cloves garlic minced

3/4 teaspoon coursely ground pepper, if using the pre ground pepper use a half teaspoon

1 and 1/2 cups heavy cream

1/2 cup grated asiago cheese

1/2 cup romano cheese

pasta water

Preheat a frying pan on medium high heat with the butter. Add the mushrooms and pepper and cook for 2 minutes and then add the garlic and cook for 1 minute. Reduce the heat to medium and add the cream, reduce the cream by 1/3 and turn heat to medium low and stir in the cheese. Add the cooked fettuccine and mix well, if the sauce seems a little thick add some pasta water. Serve and sprinkle with chopped parsley if you want it to look pretty. Normal I don’t bother making it look pretty for the picture but I had the parsley, and for a laugh thought why not.
