A Chicken Stir Fry For My Wife

It’s been a long tiring week for the two of us, I had my treat for lunch so I needed to treat my wife for supper. Chicken is her favourite protein and having it in a stir fry makes her happy. For me I would rather have beef or pork. Still even with chicken I can play a little. There are lots of stir fried on my blog because I do different things with them. There are so many different sauces you can use for the chicken marinade or for the whole thing. This one I marinated the chicken a little different and just used chicken broth for a sauce. It worked because my wife liked it and thats the important thing.

1 chicken breast sliced

1 teaspoon sesame oil

1 tablespoon teriyaki sauce

1/2 teaspoon sherry

1/4 teaspoon pepper

2 cloves garlic minced

1/2 teaspoon grated ginger

1/2 teaspoon cornstarch

Mix everything together then add the chicken and mix well. Refrigerate for at least an hour.

1 onion sliced

1 rib celery chopped

1 carrot chopped

1/2 red pepper chopped

1 small crown of broccoli

2 green onions chopped

2 cloves garlic minced

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup chicken broth mixed with 1/2 teaspoon cornstarch

2 teaspoons canola oil

Preheat a frying pan on medium high heat with 1 teaspoon canola oil. Add onions, carrots, and celery, stir fry for 2 minutes. Add broccoli, red pepper, garlic, salt and pepper, stir fry for 2 minutes. Remove and retain. Add 1 teaspoon oil and the chicken, stir fry for 2 minutes. Return the vegetables to the pan and mix well. Add the chicken broth slurry and mix well until thickened, serve with rice.
