Ham and scalloped potatoes is my favourite meal. I would take it over even prime rib and yorkshire pudding. There is something about ham with scalloped potatoes that makes it a perfect combination. Scalloped potatoes I have had with other things and they have been very good but with ham they hit the great mark. Think it may be the amount of old cheddar cheese that makes them taste so good to me. My recipe for them is already posted and so is how I cook a ham.
Buying a ham is a bargain when they are on sale because there are so many uses for the leftovers. Over the years I have found that the best value is the butt end of the ham. The leg portion doesn’t have as much meat but is the same price. Once and only once I bought 3 hams when they were on sale and froze 2 of them. I found that it is a mistake to freeze a ham. Once you thaw a frozen ham out and roast it you end up with a watery and mealy product. Thankfully I find hams on sale 7 or 8 times a year. This time it was $1.98 per pound but I have gotten them for $0.99 a pound. Last year I found them twice at the super low price.
So my 8 pound ham is going to give us lots of leftovers, which is a good thing. Will have great lunches and great suppers for the week. Great thing for me is that it isn’t chicken. Made enough scalloped potatoes for tomorrow for supper. Scalloped potatoes are just as good the next day so I always make extra. My mind is already working on what I can have for lunch this week. My mind went to something I haven’t made in 7 or 8 years, a Monte Cristo sandwich. Probably had 40 hams since the last time I made one. It’s a great sandwich and if I am not feeling lazy this week it would make a great lunch. Since I made my own mustard today I have everything to make one. So even that it’s going to be mostly leftovers this week it doesn’t mean I not going to play in the kitchen. Will still find different things to do with the ham.
