Another Cantonese Chow Mein

We went on our weekly shopping trip this morning, looking like bandits in our masks. It is what everybody should be doing and thankfully tomorrow there mandatory in Manitoba. We found some good prices on somethings. Picked up a Cook’s ham at a great price and it was my plan to have ham and scalloped potatoes for supper. We also found chicken breasts in the bulk pack at a decent price. We buy chicken breasts that way often and I wrap each breast with plastic wrap before I freeze them. Makes it easy to get just what you need for a recipe.

As we were finishing up in the store I thought I should be a good husband and ask my wife if she wanted ham or cantonese chow mein for supper. The minute I said it I knew it was a mistake and I would be making chow mein rather than ham for supper. No easy supper that would of meant just a little chopping. Thankfully I actually like chicken chow mein. So since I was going to spend some time cutting things up I figured I might as well have a little fun. So it was back to the produce section where I had seen very large white mushrooms, I thought they would be fun to use. Figured to be different I might as well use a yellow pepper. The chow mein noodles were on sale for I got two bags of them. They freezer extremely well so now I have noodles for tonight and for a recipe I will probably make next week.

So no actual change to the recipe I have already posted. Just the color of the pepper and the size of the mushrooms. Like with any stir fry just have fun making it. Play with the vegetables and how you cut them. Doing everything exactly the same way every time you make a recipe can get a bit boring, so just have fun and change it up a bit.
