Not A Rueben Sandwich, A Rueben Hoagie

84F4E617-FB97-43E6-811E-51EFEA7105B9Today was a busy day for us, so supper was something simple. Hoagies seemed like the perfect choice since I had to go to the store for milk. First time I had to run to the store other than our normal shopping trip. So it was grab a baguette and some meat, my wife is easy, turkey or chicken breast shaved. I like to change things up and as I was standing at the deli I noticed corned beef  was on sale. So my warped mind immediately went to a rueben. Not really a rueben but close enough to make me happy. You can call it a corned beef sub but they will always hoagies for me. Really simple quick and delicious supper actually. 150 grams corned beef, a little sliced onion, mozzarella cheese, mustard, and some sour kraut. Split the baguette in half cover with mozzarella cheese and some sliced onions. Put it under the broiler until the cheese is melted. Warm the sour kraut and corned beef in the microwave, put it together and add some good mustard. Now you have a very good hoagie. My wife was with chicken breast, cucumbers, tomato, mozzarella cheese, pickles, and lettuce. Of course she refuses to call it a hoagie, it’s a sub.
