Today is our pasta day but since it’s summer and going to be 33 today a hot pasta doesn’t seem to be a good idea. My wife said last night maybe I should make a pasta salad which is actually a good idea. Salads are something we both like and with a good salad dressing a pasta salad is really good. Since I make my own salad dressing I get to play with what it will taste like. Made extra because I was hoping to have leftover potato salad for lunch today but my wife ate all of it. For a potato salad that she said was just ok she ended up eating twice as much as I did. So this you can use what ever pasta you have, if you have little bits of different pasta this is a good way to use it up. With any pasta salad you can put just about anything in it, what makes it a good pasta salad is the dressing. This is a simple dressing that works with pasta.
1/2 cup lemon juice
1/2 cup olive oil
1 and 1/2 teaspoons salt
1 teaspoon pepper
1 and 1/2 teaspoons mustard
2 cloves garlic put through a micro grater
Mix everything together in a bowl and set aside
4 cups cooked pasta
1 rib celery chopped
4 inch piece cucumber cut in half moons
8 cherry tomatoes cut in thirds
8 black olives cut in half
3 green onions chopped
1/2 cup small diced mozzarella cheese
2/3 cup thinly sliced bbqed pork chop ( optional ) I used it because I had it in the fridge, use any deli meat you like.
Mix everything together in the dressing and refrigerate for at least 6 hours mixing every hour until you use it.
