My original idea was to post about bbqed pork chops, but changed my mind. A bbqed pork chop is a pretty simple thing so I decided to post about what we had with it. My wife makes great potato salad, but doesn’t ever even consider trying anything different when making it. I have been bugging her to try anything that would be different from the mayonnaise based potato salad, but it has been “no”. Since she is at our daughters for the day I decided to make a very different potato salad. I knew the chances of her liking it would probably be slim to none. Still it seemed like it was worth the gamble, didn’t get a this is great but did get it’s ok. For myself I thought it was a great potato salad and would make it often. I know that won’t happen but it is still a great potato salad.
2 potatoes cubed and boiled
1/4 cup of pickle juice
1 tablespoon olive oil
1 teaspoon honey
2 teaspoons dijon mustard
1/4 teaspoon pepper
1 cup chopped celery
4 inch piece of cucumber cut in half moons
3 green onions chopped
8 cherry tomatoes cut in half
Mix pickle juice, olive oil, mustard, honey, and pepper together in a bowl. Add the celery, cucumber, green onion, and tomatoes and mix well. Add the potatoes and mix well and refrigerate for 6 hours, mix every hour.
