My wife wanted me to make a classy chicken recipe she had found. I looked at the recipe, but cream of chicken soup isn’t in the cupboard. Other parts of the recipe didn’t seem like a good idea so I made some changes. The basic idea of the casserole are very good, but the cut up chicken seemed strange. So kept the concept and made a few changes. So what I ended up with was a good chicken casserole but it is a lot different than the classy chicken recipe.
2 flattened chicken breasts
1 small crown of broccoli separated
1/2 a red pepper cut in chunks
1 clove garlic minced
1 can mushroom soup
2 teaspoons lemon juice
1 tablespoon water
Salt and pepper to taste
1 cup grated cheddar cheese
1 teaspoon olive oil
Place broccoli, and red pepper in a casserole dish. Sprinkle the garlic over it, add salt and pepper. Microwave for 2 minutes and set aside. Mix mushroom soup,water, and lemon juice together and set aside. Salt and pepper chicken breasts, preheat a frying pan on medium heat with 1 teaspoon oil. Brown chicken breasts for about 4 minutes per side. Place the chicken breasts on top of the vegetables, pour the mushroom soup evenly over the dish. Top with the cheese and bake in a 350 oven for 35-40 minutes
