Slow Cooker Pork Side Ribs

5CE547CC-9F7B-416C-A433-9DC3E51FEACEThis was a new way to cook ribs for me. My daughter told me how she cooked ribs in her slow cooker and I thought it was worth trying. She said they turn out great and taste good. Ribs for my wife and I have always been a fall, winter, and spring thing that I cook. Because I do them in the oven they don’t get made in the summer. My wife and I really like ribs so finding a way to do them that didn’t mean 2 hours in the oven is something I have looked for. Tried the boiling method and it does work but it pulls to much of the flavour out of the ribs. Since my daughter is a very good cook I figured she might just be onto a good idea. She explained how she did it and I just modified it a little. I was impressed with the outcome and will make them this way again.

1 rack of side ribs cut in pieces

As much barbeque sauce as you like, it gets used twice

Salt and pepper to taste

1 large onion sliced

Cover the bottom of the slow cooker with the onion slices. Salt and pepper the ribs and brush with bbq sauce. Place the ribs on top of the onion and cook for 6 hours on low. Remove the ribs and place bone side up on a foil covered cookie sheet. Brush ribs with bbq sauce and place in the oven under the broiler. The oven rack should be about 6 inches below the element. Broil for about 3 minutes, turn the ribs over and brush with bbq sauce and broil for about an additional 3 minutes. Remove from oven and serve.
