Fried Rice With Pork Chops

This is a little different than my normal fried rice because I don’t have any bacon. So it was probe the memory bank for a fried rice I made in the past. This I guess is more like restaurant style than what I normally make. Still any kind of fried rice is a good thing, even the ones I have had with frozen vegetables. So this fried rice is made with just the things I had that I thought would work. I didn’t feel like making egg ribbons so took the lazy route with the egg. Well I guess it isn’t the lazy way it’s the way an egg is used in most fried rice. The rice I took out of the freezer this morning and left on the counter to thaw and dry.

2 and 1/2 cups cooked rice

5 green onions chopped

1/3 red pepper diced

1 small rib celery chopped

1/3 cup frozen peas

2 cloves garlic minced

Pinch of red pepper flakes

1 beaten egg

1/2 teaspoon olive oil

2 teaspoons bacon fat

2 teaspoons soy sauce

1/4 teaspoon pepper

Preheat a frying pan on medium heat with the olive oil. Add celery red pepper flakes, garlic, and red pepper and cook for 2 minutes, remove from pan. Add the bacon fat, when hot add the rice and mix. Press the rice down and put the celery, red pepper, green onions, peas,and sprinkle the pepper. Leave it alone for 3 minutes then mix and press down. Cook for 2 minutes and then pour the egg around and mix for 30 seconds. Add the soy sauce and mix extremely well and serve.
