There are tons of recipes for this kind of chicken, mine is kind of like the others I have seen. What I did is play with the concept and use things we have and like. My wife made it a few years ago from a recipe she found online. It was good but it needed some help. It was what I would call the start of a good recipe but needed to be built to our tastes. Any and I can’t stress it enough, any recipe is a recipe for the taste of the person writing it. When a recipe is created it is created for the personal taste of the person creating it. So yes it a good idea to make the recipe the first time as it is written, but then you need to add and subtract so the flavours are to your taste. If you use cookbooks then write your changes in them, my old cookbooks are full of my change notes. My recipes are tailored to the tastes of myself, my wife, and my family. So they have lots of garlic, pepper, thyme, cheese, italian seasoning etc. these are things we like. The concept of the recipe is the important part, the exact seasoning you need to make them match your tastes. That’s what I did with this recipe, took the concept and made the seasonings match our tastes.
2 flattened chicken breasts
1 tablespoon mayonnaise
1 and 1/2 tablespoons parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic put through a micro grater or a garlic press
1/4 teaspoon italian seasoning
1 green onion finely chopped
Salt and pepper to taste
Mix mayonnaise, parmesan, garlic, salt, pepper, italian seasoning, and green onion together. Salt and pepper the chicken breasts, and place on a parchment lined baking dish. Spread the mixture equally on each breast, bake in a preheated 375 oven for 40 minutes.
