It’s Not Friday, It’s Friday Surprise

42F0196E-76FE-453D-9C38-A5C019B7BD8AThis is something I have been making for over 40 years. Everytime we have leftover roast pork I make Airport rice and pork. It was a great meal the first time I made it, and it still is a great meal. My wife and even our kids liked it from the first time I made it. I really easy to make and you can make the same thing and use a different leftover meat. When I think about the combination of things used it makes sense. The having it with gravy on top of it just makes, for me, no sense at all. Gravy on rice just doesn’t seem right, but the combination of rice, meat, and vegetables with gravy on top for some reason works. I wouldn’t have this now without having gravy on it. It’s one of the top favorites recipes that I make and well worth making if you have leftover roast pork. Over the years the vegetable parts has been different sometimes. I have put mushrooms, bok choy, spinach, and even water chestnuts in the mix. That’s the nice thing you can use what you have for the vegetables.
