Egg Hash And Bacon

3F7CBAA3-E270-4D8C-8FCA-9C83BCDEBA86This ended up being something different than it started out to be. I found a little red pepper when got in the fridge, so I thought Denver sandwiches would be ok. The problem was it wasn’t that long ago that we had them. Also there was parsley that needed using up. As I started dicing the red pepper I decided I could make an egg hash. Egg hash is just scrambled eggs with stuff added. Had the bacon so that would go well with it. You can never go wrong with bacon and eggs

8 eggs beaten with 1/4 cup half and half cream, then add a cup of cheddar cheese and mix in

1/4 cup diced red pepper

1/4 cup diced onion

1/4 cup diced celery

1/4 cup chopped parsley

salt and pepper to taste

1 tablespoon butter

Preheat frying pan with butter on medium heat. When hot add red pepper, onion, celery, garlic, salt and pepper, cook for 3 minutes then add parsley and cook for 1 minute. Pour eggs in and cook till there cooked how you like them, mix constantly.
