This is a meal I have made for our grandkids, it’s something we know they will eat. When I have made it for them my wife and I have enjoyed it also. I just wanted to have a fun day, so a fun meal seemed like a good idea. You can use the frozen per made nuggets, I made my own. The coating is the one that I used in my Jan. 20 , 2020 post Chicken, Rice, and Broccoli. Potato wedges, you can use the frozen ones but I make my own. It’s just a potato cut in wedges tossed with oil, salt and pepper and bake in a 400 oven for 45 minutes turned after 25 minutes. So simple why pay triple and buy them frozen. We had broccoli with grated cheese over it, cheese on broccoli gets the kids to eat broccoli. You could have anything you like. That leaves dipping sauce for the chicken nuggets, that’s an open ended thing, just have what you like. So the recipe here is just the dipping sauce I like. It’s also good with pot stickers and Vietnamese spring rolls.
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon brown sugar
1 clove chopped garlic
1/4 teaspoon red pepper flakes
1 teaspoon chopped onions
1/4 teaspoon sesame oil
1/2 teaspoon chopped parsley
dash of fish sauce
Mix everything together in a small bowl, let sit for at least 2 hours.
My kind of supper. Roasted potato wedges are a wonderful side … I made a large tray for yesterday’s supper (400 deg F for 1 hr, drizzled with EVOO, dried oregano, basil, onion and garlic powder and salt and pepper) A side with a pulled pork slider topped with cheese. 🙂
It was a fun meal, we need meals that are just for fun every so often.
