Chicken, Rice, And Broccoli

Actually it is an Italian recipe that I slipped the rice in because my wife and I didn’t want pasta. You can call it chicken parmigiana if you want, but it’s just breaded chicken baked in the oven that has spaghetti sauce and mozzarella cheese on it. This is a simple recipe that I feel a little silly even posting. I have made this the traditional way but it’s more work and more clean up, the simple way has as good an outcome. It’s a little healthier also since it’s rye bread crumbs and it’s baked. You could have it with pasta but it’s good with rice also. I made one other change just because I wanted to, I used pizza sauce that I had in the fridge. Figured why not, the mozzarella goes well with pizza sauce. I guess you could call it pizza chicken if you want.

2 flattened chicken breasts

This is for the breading station

1 /2 cup flour

1/2 teaspoon salt

1/2 teaspoon pepper

Mix together in a flat bottom bowl large enough to fit the flattened chicken breasts

1 egg beaten with 1 tablespoon cold water, similar bowl as above

1 cup fine rye bread crumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon pepper

Mix together on a plate, I used a pie dish.

Standard breading technique, flour, then in the egg, then into the bread crumbs packing the crumbs into the chicken breasts. Place on a plate keeping them separate and refrigerate for at least 1 hour.

2 tablespoons pizza sauce

2 slices mozzarella cheese

Cover a metal baking pan with parchment paper and place in the oven, turn the oven on to 350. You want the pan to preheat in the oven. After oven has heated spray the parchment with cooking spray, place chicken breasts on the pan and return to the oven. Cook for 20 minutes then turn chicken over, cook for another 30 minutes. When there is 15 minutes left spoon 1 tablespoon of pizza sauce on each breast and place a cheese slice on each. When the total 50 minute cooking time is up serve . I served with my idiot proof rice, (April 2019 ) it great with any pasta you like also.
