Boxty To Use Up The Leftover Mashed Potatoes

2671BA32-7938-4F3C-9262-A83F5C709847Thanks to our Irish son-in-law I learned how to make boxty. The name means nothing to him, for him there just potato cakes. When I was researching something Irish to make for him I came across boxty, it’s now my go to recipe to use up leftover mashed potatoes. Of all the things I have tried to use them up over the years this is the best. They are simple to make and taste great. They can be eaten with lots of different things, even as a top for a bowl of chilli. The only bad thing I can say about them is, you want to keep eating them when you start. One of them is never enough. Tonight we had them with turkey and gravy and carrots. The recipe is already on the site. If you haven’t had them make them they’re very very good.

    Thank you for the reminder about this simple but delicious way of using up leftover mashed potatoes. I so rarely make extra and when I do, I freeze it in single serving containers but this is better. Colcannon is another Irish dish I keep meaning to make for St. Patrick’s Day. Maybe this year. 🙂
