Another leftover supper for us tonight. Funny thing is we actually like having leftovers. They make for a quick and simple meal. Tonight we’re finishing up the meatballs from Christmas. I wanted to make rice pilaf to have with them, my wife wanted plain rice. Guess who won, but I am still adding something for myself. Since I couldn’t cook things in the rice I decided to cook something to put on top of mine. Had to go to the store for milk and cream so that gave me a chance to look for something I could make. I wanted it to be still something simple, my original thought was stir fried vegetables. By the time I hit the store my mind had changed. I really like mushrooms so I decided to have mushrooms with green onions, lots of garlic, and parsley. Simple and quick to make and would go well with rice. When ever I cook mushrooms I add a little soy sauce at the end. Since I was having them over rice, simple thing just add a little more soy sauce. If you like mushrooms this is really good and was great with the rice.
12 mushrooms sliced
3 green onions chopped
4 cloves garlic minced
1/4 cup finely chopped parsley
1 and 1/2 tablespoons soy sauce
1 tablespoon butter
pinch of red pepper flakes
salt and pepper to taste
Preheat a frying pan on medium high heat with the butter. When the butter starts to brown add the mushrooms, salt and pepper. Cook for about 5 minutes tossing often, add the garlic and green onions, cook for 1 minute. Add soy sauce, cook for 1 minute, stir in parsley and serve.
