Poor Neglected Carrots

We are having roast pork loin for supper. Was looking around to see what vegetables we could have with it. Usually it’s corn but I felt like having something different. Broccoli, brussel sprouts, or salad we have often. Realized we don’t have carrots very often. Use them in soups, stews, and other dishes but we rarely have them as a  vegetable. It was sometime last year that we last had them. So they have been neglected, which is a shame because we both really like carrots. Tonight they are the vegetable of choice.

3 carrots sliced diagonally

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon dry dill

1/2 tablespoon butter

Put everything except the butter in  a pot, add enough cold water to cover and set aside for a half hour before cooking. Boil for about 5 to 10 minutes depending on how thick you cut the carrots. When cooked drain and return to the pot. Add the butter and toss till butter is melted and carrots are coated and serve.
