I am feeling really stupid today. Went grocery shopping this morning and when in the meat department a whole bunch of ideas for using the pickle jar stuff popped in my mind. Pickles are always in our fridge, and for years all I have seen was the pickles. Occasionally have used a little of the juice but have ignored the other stuff in the bottom of the jar. I have thrown away a product that I can now see multiple uses for. Other part that bugs me is it is a free product. Here are some simple ideas I have come up with that will create a great outcome.
Mix it in soft butter and chopped parsley. Spread it under the skin on chicken breasts before roasting.
Add it to chopped olives chopped tomato and parsley and spread on a crostini.
Mix in with grated mozzarella cheese, chopped ham, chopped green onion and stuff in a chicken breast.
Mix with chopped parsley, chopped green onion, olive oil, and pepper. Brush on steak when you take it off the grill. Will work with pork, chicken even fish.
There are lots more ideas floating around in my warped mind. Just really bugs me I have missed this all these years. I don’t think I will look at what’s in the fridge the same way I have ever again. Sometimes I guess we miss things that are in front of us everyday.
