Ended up with 2 of our granddaughters sleeping over last night. They wanted pancakes for breakfast. It’s funny that they think I make the best pancakes. My pancakes are the simplest pancakes you can possibly make. I have cookbooks that have these complicated methods for making pancake batter. They may make good pancakes but they take a simple breakfast and make it a lot of work. My pancakes are light and fluffy and taste good. It takes about 3 minutes to make the batter, and 20 minutes to rest. This makes 5 about 8 inch pancakes. You can double or triple it if needed.

1 and 1/2 cups flour

2 tablespoons sugar

1 tablespoon baking powder

2 teaspoons salt

1 and 3/4 cups milk

4 tablespoons melted butter

1 large egg beaten

Shift flour, sugar, baking powder, and salt in a large bowl. In another bowl whisk egg and then add milk and melted butter. Whisk until blended. Add the mixture to the flour and whisk until just about smooth. Set aside for 20 minutes and stir just before using.
