Kind of gotten myself hooked on making salad dressing with white wine vinegar. A couple of months ago I wanted a different salad dressing. Looked at all the different vinegars I had in the cupboard. There was half a bottle of white wine vinegar, not sure how long I have had it or why I bought it. Thought I could play with it and make something that would make a good salad dressing. Made a simple version but it seemed missing something. Added some herbs and it worked. Now on my second bottle of white wine vinegar. This will store in the fridge for a week so I make lots.
1/2 cup white wine vinegar
1/2 cup extra virgin olive oil
2 teaspoons salt
1 teaspoon pepper
1 tablespoon honey
2 teaspoons grainy mustard
3 large cloves garlic grated or put through a garlic press
1 teaspoon Italian seasoning
Put everything in a jar and shake well. It’s best if you make it 2 or 3 hours before you use it. It takes a while for the herbs to mellow out and flavour the oil and vinegar. This works well for a quick marinade for chicken. You only want to marinate the chicken for 1 hour. Works also for a 10 minute marinade for fish or shrimp.
