Chicken and Pan Onion/Garlic Gravy

Finally about 95 percent over my stomach trouble. So its time to start cooking and having fun doing it. Not sure which was worse the bad stomach or the not wanting to eat or cook. Just damn glad to be eating full meal and wanting to cook.

So it’s a chicken recipe but it has lots of flavour from the gravy. This cooks quickly and is super simple. You can double or triple it depending on how many your feeding.

2 chicken breasts flatten to about 1/2 inch

1/3 cup finely chopped onion

5 cloves garlic chopped

salt and pepper to taste

1 tablespoon olive oil

2 tablespoons butter

2 tablespoons chopped parsley

2 cups chicken broth

1/2 teaspoon Kitchen Banquet

In a preheated pan on medium high heat add olive oil and butter. Salt and pepper chicken breasts, when butter starts to brown add chicken breasts to pan and cover. Turn heat to medium and cook for 5 minutes. Turn breasts over and add onions and garlic, cover and cook for 5 minutes. Remove chicken from pan, add flour and whisk for 1 minute. Slowly add chicken broth whisking as you add. Cook until thickened, reduce heat to simmer add parsley and kitchen banquet, whisk to blend. Return chicken to pan and simmer for 2 minutes. Serve with mashed potatoes and vegetables of your choice.

I find when making a pan gravy you need to heavy salt and pepper the meat. This not only flavours the meat but also gives salt and pepper for the gravy. The reason I use Kitchen Banquet is I like my gravy brown not yellow. It’s just my personal taste so it’s not a necessary ingredient to any of my recipes.
