Easy lemon Chicken

Lemon anything is something I like to have. Chinese version was the first time I had lemon chicken. It is something I still enjoy. We try to eat healthy meals, so I try to take the flavours of things we use to eat and make a healthier version. This recipe gives the flavours but removes the deep fried coating and the thick lemon sauce. It also gives me a way to give chicken breasts flavour. Our kids get a kick out of the fact I dislike chicken but cook it so often. I have always wondered why people who dislike fat on any other type of meat, like dark meat chicken, especially the thighs. You hear they are so moist, it makes me chuckle. That moisture is just really fat. Ok this is about lemon chicken not my opinion of chicken.

3 flattened chicken breasts

1 and 1/2 tablespoons butter

flour to coat the chicken

4 cloves garlic minced

3 green onions chopped

1/4 cup chopped parsley

salt and pepper to taste

1/2 cup lemon juice

Salt and pepper both sides of the  chicken breasts, coat with flour and pat the flour in, set aside. Preheat frying pan on medium heat, add butter. When butter starts to sizzle add chicken breasts. Cover and cook for 5 minutes, turn chicken add the garlic, green onions, parsley, cover and cook for 5 minutes. Uncover and turn chicken, add lemon juice, cook uncovered for 2 minutes. Turn chicken and check to see if cooked. Spoon sauce over each breast and serve. Goes well with butter noodles, rice, roasted potatoes, or anything you like.
