This is a recipe that gives my wife chicken and myself chicken with some flavour. We had it with baked potatoes and a salad. You can have it with just about anything, buttered egg noodles and asparagus works great to. This is quick and simple to make, the prep. time is about 10 minutes at the most, cooking time is about the same. This is for 2 people but can be doubled easily.
2 chicken breasts pounded to about 1/2 inch thickness
4 mushrooms thinly sliced
4 large cloves garlic
1 tablespoon chopped parsley
1 teaspoon olive oil
1 tablespoon butter
salt and pepper to taste
1 hour before cooking pound chicken breasts, salt and pepper both sides, put in fridge until you cook.
Preheat a frying pan on medium heat with olive oil. Add chicken, cover, turn every minute until cooked. After 5 minutes add, butter, mushrooms and garlic, stir when you turn chicken. After 5 more minutes check to see if chicken is cooked, add parsley mix and serve.
