Quick Cheat Clam Chowder

Clam chowder is something I truly love to eat. Whether it is New England or Manhattan both are great. Most recipes don’t have enough clams so I double the amount. Even Campell’s clam chowder I like but I add a can of baby clams to it. This is a bit of a cheat on making it from scratch. You will be surprised how great it tastes.

6 cups of leftover potato soup

2 cans baby clams

Put leftover potato soup in a pot on medium heat. Put 1 can baby clams with liquid in a food processor and chop until fine. Add to the potato soup with the other can of clams including liquid. Heat stirring until it just starts t boil and serve.

Even when making clam chowder from scratch I always blitz 1 can of clams in the food processor.  Doing this increases the clam flavour 10 fold. Recipes usually call for 2 cans of clams, I use 4.
