Chicken fajitas are a quick and simple meal to make. Quick and simple doesn’t mean they lack taste. They are delicious and fun to eat. You get to top them with anything you like. You can use packaged seasoning or make your own. All the seasoning recipes are basically the same. I make the seasoning because I get to control the amount of salt. Cutting down the amount of salt makes fajitas a healthy meal. Using lots of lettuce, cheese, and sliced avocado give you a balanced meal. This is a recipe for 2 people.
2 chicken breasts sliced
1 large red onion sliced
1 large red pepper sliced
2 teaspoons fajita seasoning
1 and 1/4 teaspoons olive oil
toppings of your choice (chopped lettuce, grated cheese, sliced avocado, salsa, sour cream, olives, tomato, or anything else you like)
One half hour before cooking mix chicken with 1 and 1/2 teaspoons seasoning. Mix onion and peppers with 1/2 teaspoon seasoning
Preheat a non stick grill pan on medium heat. Add the onions and peppers. They will take 10 minutes to cook and need to be tossed often preheated frying pan to medium high with 1 teaspoon oil, add chicken and cook 5 minutes. Remove from heat and serve with warm tortillas and toppings of your choice.
