This fried rice came about 25 years ago from my wife making cabbage rolls. After she was done there was leftover filling, I reheated it and had it with soy sauce. It kind of tasted like fried rice. I really liked the bacon flavour. About a month later I had leftover rice and planned to make fried rice. I remembered the bacon flavour from the cabbage roll filling. This is the fried rice I came up with.
4 cups leftover rice
3 slices of bacon sliced thinly
1/2 onion chopped
1 rib celery chopped
4 green onions chopped
3/4 cup peas
2 cloves garlic minced
1/2 tablespoon salt
1/2 tablespoon pepper
1 and 1/2 tablespoons soy sauce
2 eggs beaten
1/2 tablespoon oil
In a preheated frying pan on medium heat with 1/2 tablespoon oil dump the beaten egg. Cook it like your making an omelette, when cooked remove and cut into 1/2 inch by 2 inch ribbons, set aside. Add the bacon to the pan, cook until crisp, remove from pan and set aside. Leave about 1 teaspoon bacon fat in the pan, add onion, garlic and celery, cook for 3 minutes. Place rice in pan and break up the clumps,add bacon, mix well. Let it cook without stirring for about 3 minutes, you will hear it crisping then stir. Place peas and green onions on top, cook for another 3 minutes then sprinkle soy sauce around pan, mix well. Add egg ribbons, stir until the egg is hot, serve immediately.
I make lots, it will keep in the fridge for a couple of days and reheats well in the microwave.
