Grill Pan Chicken

This evolved from me having to bbq chicken. Chicken is my wife’s favourite meal, but not mine as I find it lacking flavour. It started out with my marinading flattened chicken breasts in Italian salad dressing and barbecuing it. You can use if you want, it tastes great that way. Since we make our own salad dressings now it’s a little different than just salad dressing. It’s winter here so barbecuing is something that’s  not  happening. A grill pan works extremely well and is what I used. This is a very simple recipe and super easy. Goes well with stuffed baked potatoes.

4 flattened chicken breasts

1/4 cup lemon juice

1/4 cup olive oil

1 tablespoon grainy mustard

1 teaspoon salt

1/2 teaspoon pepper

4 cloves minced garlic

Mix everything in a large zip lock bag, add chicken and squish it around to coat the chicken. Marinate in the fridge for 6 hours. Remove chicken from the bag onto paper towel and pat dry. Place chicken on a preheated dry grill pan on medium heat. Grill for 4 or 5 minutes on each side, depends on the thickness how long it takes. You can make the fancy grill marks by rotating a half turn after 3 minutes on each side.
