Still remember the first time I had a stuffed baked potato. The company I worked for was having a staff party at a restaurant called Oliver’s . I asked the waiter exactly what it was, seemed like it would be good. It was very good and I have been enjoying them ever since. They are easy to make, just a little extra work to them.
4 baking potatoes (clean the skins well they are very good)
1 cup grated old cheddar cheese
4 finely chopped green onion
1/4 cup melted butter
1/4 cup sour cream
1/4 cup of half and half cream
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup of bacon bits (this is optional)
Bake the potatoes for 1 and 1/2 hours, set aside to cool. After the potatoes have cooled for about 1/2 hour cut in half and carefully scoop out into a bowl. Add the butter, cream, sour cream, salt and pepper and mash. When well mashed add the green onion and cheese, mix well. Stuff the potato shells equally using all the potato mixture. Place on a parchment lined baking sheet. This can be done a couple of hours ahead just cover loosely with plastic wrap. 45 minutes before your going to eat put in a preheated 350 oven. If you want sprinkle with bacon bits and serve.
