Normally I am a potato and gravy person. French fries not that big on my list of must have things. Would rather have scallop potatoes. Roasted potatoes I have come to totally enjoy, once I figured out how to cook them properly. The recipes that I have seen are all basically the same. Over the years I have played with different methods. This is what I ended up with.
6 tennis ball sized peeled and cut in half potatoes
1/4 cup butter
1 and 1/2 teaspoons salt
1 teaspoon pepper
1 tablespoon Johnie’s seasoning (available at Costco)
Put the potatoes in a pot of cold water and bring to a boil, boil until they fall off a fork, about 15 minutes. While the potatoes are boiling melt the butter, salt and pepper together in a microwave. Drain the potatoes and return them to the pot, add the melted butter to the pot, mix the butter completely with the potatoes. Sprinkle the Johnie’s over the potatoes and mix. Let them rest for 1/2 hour. Place the potatoes on parchment lined baking pan, flat side up. Put in a preheated 350 oven, cook for 1 hour. Turn them to flat side down after 30 minutes. Serve immediately.
